Hello Spring!!



Spring is finally here! Ryan, Weston, and I are beyond thrilled for the wonderful 70 degree weather and this past weekend we have spent every moment we can outside. Weston loves it so much and every time we have to come back in he has a breakdown like no other. I swear if he had his crib on the porch he would be more than thrilled to sleep outside. Here are some pictures of our weekend.

Forever

Easter!!

This Easter we had so much fun with our family down in Rexburg. Weston loved playing with Grant, Noah, and Ben and seeing him have fun was so much fun for Ryan and I. I loved being back in Rexburg for a few days and enjoyed my yearly fix of Bajio pineapple shrimp salad...oh how I love it!
Weston loved his Easter basket in the morning. Between the bubbles, toys, clothes, crayons, and fruit snacks it is safe to say he was spoiled. Thanks a ton Dawn!
The boys got guinea pigs for Easter and Weston loved them. He also was obsessed with their dog, which is causing Ryan and I the debate of when to get him a puppy.
The freedom of dying eggs without me going crazy of the mess he is making!


Wondering why I am trying to get his attentions and disrupting his egg dying session.

Fruit Salsa and Cinnamon Chips

Last night I needed a little treat to relax from tending a very sick, cranky little boy. He has strep throat and I have never seen him so miserable:(. I needed a break so Ryan took over and I made this super yummy desert. I didn't have all the fruit they asked for so I just used what I had and it was so good!




Fruit Salsa and Cinnamon Chips

2 apples
2 kiwis, peeled and diced
peaches
pinepple
2 bananas
strawberries
2 tablespoons white sugar
lime or lemon juice

10 (10 inch) flour tortillas
butter flavored cooking spray
2 cups cinnamon sugar
Directions
1.In a large bowl, cut all fruit up into tiny pieces and add a little bit of lime or lemon juice for flavoring. Then add sugar. Cover and chill in the refrigerator at least 15 minutes.
2.Preheat oven to 350 degrees F (175 degrees C).
3.Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
4. Bake in the preheated oven 10to 13 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

Reading Drawer

Weston has a new favorite place to read his books. It also appears that he likes to multitask. Read 3 books while watching Baby Einstein up close and personal in a drawer...who would have thought!
